Sun (oven) Dried Tomatoes

Have you made enough soups, sauces and salsas already this summer and still got an abundance of tomatoes left? We know how you feel, this simple recipe means you can enjoy your homegrown tomatoes for longer.

We never judge how many tomato plants to grow, we start off by picking a few of our favourite varieties and then a couple of new lines we might introduce, a few months later and we are left with tomato plants full of fruit and vow to only do a couple the next year. This has meant that we had a few different colours, shapes and sizes to choose from.

Once you have chosen the tomatoes you are going to choose, simply slice them up in to smaller, bite sized pieces.
Lay these out on a tray covered with baking parchment so they don’t stick and season with salt.

We then like to add a couple of garlic cloves and some fresh herbs, we used thyme and rosemary as these withstand the roasting. (grow your own herbs with one of our kits). Pop these on the tray with the tomatoes and pop them in the oven at 150°c fan for around an hour or so, have a little peak and see if they are the right kind of ‘sun dried’ for you.

Take them out of the oven and enjoy fresh or you can store them in a jar with olive oil, use enough oil so that the tomatoes are covered. This will also preserve your garlic and herbs.
